Lime Pie

On the rare mornings I get up early with nothing to do, I always end up baking. Today I decided to try out this ancient recipe for a lime pie.
Below is the recipe if you want to try it out yourself.

PiePieshell before and after the oven. Its supposed to be very sweet to even out the sour taste of the limes, but I don’t have such a sweet tooth so I used half the amount of sugar.

Here it is! Ain’t she a beauty? Using just a few simple ingredients, making the thing is as easy as pie.
And my, is it delicious. Really, when it comes to baking pies, less is always more.

EASY AS PIE LIME PIE.
-250 g flour.
-200 g cold butter, chopped.
-150 g icing sugar.
-5 eggs.
- 3 limes.

PIESHELL
For the dough, combine 125 g butter, 100 g icing sugar, the flour and one egg with your hands. Let it rest in the fridge for about 15 minutes.
Then place the dough in a pie dish (preferably a springform pan) and bake it in the oven (200′C) for 15 minutes.

FILLING
Zest and juice the limes, and mix this is a bowl with the remaining eggs,icing sugar and (melted!) butter. When the pie dish is out of the oven, pour the limesauce into the pieshell and let it bake in the oven for (give or take) 30 minutes. The top should be nice and brown. Let it cool down before slicing!
